Abstract

Increasingly tighter regulations regarding organic waste, and the demand for renewable chemicals and fuels, are pushing the manufacturing industry toward higher sustainability to improve cost-effectiveness and meet customers’ demand. Food waste valorization is one of the current research areas that has attracted a great deal of attention over the past few years as a potential alternative to the disposal of a wide range of residues in landfill sites. In particular, the development of environmentally sound and innovative strategies to process such waste is an area of increasing importance in our current society. Landfill, incineration and composting are common, mature technologies for waste disposal. However, they are not satisfactory to treating organic waste due to the generation of toxic methane gas and bad odor, high energy consumption and slow reaction kinetics. In fact, research efforts have also been oriented on novel technologies to decompose organic waste. However, no valuable product is generated from the decomposition process. Instead of disposing and decomposing food waste, recent research has focused on its utilization as energy source (e.g., for bioethanol and biodiesel production). Organic waste is also useful to generate useful organic chemicals via biorefinery or white biotechnology (e.g., succinic acid and/or bio-plastics). This article is aimed to summarize recent development of waste valorization strategies for the sustainable production of chemicals, materials, and fuels through the development of green production strategies. It will also provide key insights into recent legislation on management of waste worldwide as well as two relevant case studies (the transformation of corncob residues into functionalized biomass-derived carbonaceous solid acids and their utilization in the production of biodiesel-like biofuels from waste oils in Philippines, as well as the development of a bakery waste based biorefinery for succinic acid and bioplastic production in Hong Kong) to illustrate the enormous potential of biowaste valorization for a more sustainable society. Future research directions and possible sustainable approaches will also be discussed with their respective proofs of concept.

Abstract

Urban food waste in the U.S. is almost exclusively bound for landfills, with significant environmental and the economic consequences. Contrary to this linear flow, cities across the developed world are implementing organics collection programs (OCP) that transform waste into a resource. These systems convert excess food into inputs (e.g. biofuel or soil amendment) for other processes (i.e. food and energy production, water reclamation) thereby approximating naturally occurring closed-loop nutrient systems. However, efforts to address the flow of food waste into landfills have largely focused on technical solutions that alter the waste management systems of provision, largely ignoring the social aspects of food waste generation and source separation. Drawing on the Theory of Planned Behavior and concepts from social marketing research, results from longitudinal repeated-measures experiments indicate that providing supportive infrastructure is necessary for residents to act on their "intention" to divert food waste from landfills. The experiments are also the first to confirm that communicating the new community norms of separation in the context of a new OCP will increase separation behavior. In sum, closing the loop on urban food systems demands transformations of the systems of provision as well as the social aspects of waste systems. This research traces the evolution of organic waste policy on two continents using problem-framing as a lens through which to understand how different characterizations of food waste as a problem (i.e. as one of disposal efficiency, risk management or value recovery) result in different policy responses with varying degrees of linearity in urban food material flows. This dissertation contends that successfully closing the loop on urban food systems will demand new problem-framing that employs systems-thinking at the highest levels of policy-making, transformations of both the systems of provision and social practices, and an understanding of the relationship between social and natural systems (i.e. socio-ecological relationships).

Abstract

Food waste is a major problem in the United States, especially within school cafeterias. Previous studies have shown that educational videos and posters help students retain information and understand a topic better; this can be an effective method for reducing food waste within schools. The purpose of this experiment was to investigate the impact of different types of media in reducing food waste and influencing students’ willingness to participate in the process at NYC high schools. Participants were given a general information survey, and a daily survey for five days to self-assess the percentages of foods they consumed, threw out, and saved. On the sixth day, the participants were given a video or a poster treatment. For another five days, the participants filled out the same daily survey with the intervention in mind. The results showed that different types of media did not impact students’ willingness to reduce food waste. The hypothesis that educational videos are more effective than posters in reducing food waste was not supported. Students claimed to wish to reduce food waste but did not actively participate in the reduction of food. It is often believed that educational media can be a powerful influence in causing change. However, the experiment suggests that when the media such as posters and videos is not engaging enough, the media will eventually lose its effectiveness. It was also found that lunch brought from home is wasted significantly less than lunch provided by the school.
